Weren’t these spaces part of a planned, or hopeful, food court at one point? I also thought there were more than just two bays, but guess I was wrong.

Yep, you’re right. Got the location mixed up.Are you thinking about the food hall at Stantec? I don't recall a food court planned at the Connect Centre.
Instead of closing altogether, Amy should move Chicken For Lunch here. One can dream.
Wasn’t Starbucks interested in opening up at the base of Stantec? I know they shelved their original plans because of Covid but I thought they had shown interest in opening there again recently.

Starbucks only does standalone + drive-thrus now (with some exceptions).
Sometimes cheaper, but there are also good sales in store you can totally miss out of or not be aware of if you never go there.Yes things are cheeper online but meanwhile local businesses suffer unless they are online businesses based here.
Consumers are not agreeing with this and THAT IS THE PROBLEM.Sometimes cheaper, but there are also good sales in store you can totally miss out of or not be aware of if you never go there.
Of course there is the hassle of getting thing delivered to your home. Such as if you are not there; the risk of things being stolen, or you have to go pick up packages.
Depending on the brand, sizing may not be the same, so then you have to return items. It is not always more convenient or faster.
Actually significantly more purchases are still made in store than on line.Consumers are not agreeing with this and THAT IS THE PROBLEM.
